This recipe is so easy to make. It will take 5 mins to stir up this amazing radish and corn salsa. It is good for 1 big healthy serving. You would want this for lunch, for snacks, and even for dinner.
- 1/2 cup tinned corn kernels, drained and rinsed
- 1/2 cup cooked black beans
- 1/2 cucumber, diced
- 1 large tomato, diced
- 1/4 red onion, finely diced
- 2 radish, finely sliced
- 1/2 lime, juiced
- sea salt and freshly cracked black pepper to season
- 50 g plain, sugar-free corn chips, to serve
- Add all ingredients besides the corn chips into a serving bowl.
- Toss to combine.
- Serve alongside the corn chips
