Raw and crunchy easy Pad Thai recipe is so good

This easy pad thai recipe is made from healthy vegetables. It’s light delicious and refreshing. It’s perfect for any meal of the day.  I first tried this when staying at the former Cabarita ocean health retreat, the recipe is part of their cookbook and was developed by spa chef Sam Gowing.

This recipe is good for 2-4 servings.

Pad thai is a common type of noodle dish from Thailand. Usually, Pad Thai is served with rice noodles and some chicken, shrimp and egg.

Don’t worry! There are no noodles in this recipe. The ingredients are all veggies! This is super healthy and super yummy! I’m sure that you will love this recipe and you will serve this for your family, friends or for yourself again and again.


Pad Thai
1 carrot, julienne
1 red capsicum, julienne
½ red cabbage, thinly sliced
1 zucchini, sliced into noodles
with a spiral slicer
¼ cup snow peas, thinly sliced
1 spring onion, thinly sliced
2 tablespoons lime juice
2 tablespoons tamari
1 small red chilli finely chopped
1 tablespoon maple syrup
3 tablespoons tamarind paste
1 cup sunflower sprouts
¼ cup basil leaves, finely sliced
¼ cup coriander, roughly chopped
¼ cup mint leaves, roughly chopped

• Mix all ingredients in a bowl

Spicy almond dressing
3 tablespoons almond butter
1 tablespoon Spicy almond dressing on maple syrup
4 sundried tomatoes
2 tablespoons apple cider vinegar
2 tsp tamari
½ cm ginger
1 garlic clove

• Place in blender at high speed until smooth
• Place Pad Thai on plate and spoon over satay sauce
• Garnish with almonds and chilli flakes
